Ingredients

- 1 cup mascarpone cheese
- 1/2 cup limoncello
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/4 cup butter, softened
- 2 eggs
- 1 tsp baking powder
- 1/4 tsp salt
- Zest of 1 lemon
- 1/2 cup powdered sugar
- 2 tbsp lemon juice
- 2 tbsp sparkling water
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix butter and sugar until creamy.
- Add eggs, limoncello, and lemon zest. Mix well.
- In another bowl, combine flour, baking powder, and salt.
- Gradually add dry ingredients to the wet mixture. Stir until smooth.
- Pour the batter into greased bite-sized cake pans.
- Bake for 15-20 minutes or until golden.
- Let cakes cool completely.
- In a small bowl, whisk powdered sugar, lemon juice, and sparkling water for drizzle.
- Drizzle over cooled cakes before serving.
Notes
- Store in the fridge for up to 3 days.
- Try using different citrus juices for variety.
- For a stronger flavor, add more limoncello.
