- 4 large potatoes, peeled and diced
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 1/4 cup green onions, chopped
- 1/2 cup milk
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Boil the diced potatoes until fork-tender, about 15 minutes.
- Drain the potatoes and return them to the pot.
- Add sour cream, milk, garlic powder, salt, and pepper to the potatoes. Mash until smooth.
- Stir in cheese, bacon, and green onions.
- Transfer the mixture to a baking dish and spread evenly.
- Top with additional cheese and bacon if desired.
- Bake for 25-30 minutes until heated through and cheese is bubbly.
Notes
- Use russet potatoes for best texture.
- Can substitute Greek yogurt for sour cream.
- Add more toppings like jalapeños for extra flavor.
