Ingredients

- 4 large russet potatoes
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup chopped green onions
- 1/2 cup cooked and crumbled bacon
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and scrub the potatoes, then poke holes in them with a fork.
- Rub the potatoes with olive oil and sprinkle with salt.
- Bake the potatoes for about 45-60 minutes or until tender.
- Once baked, remove them from the oven and let them cool slightly.
- Cut a slit in the top of each potato and gently squeeze the ends to open them up.
- Fluff the insides with a fork and add salt and pepper.
- Top with sour cream, cheddar cheese, green onions, and bacon.
Notes
- For a healthier option, use Greek yogurt instead of sour cream.
- You can add other toppings like chili or vegetables.
- Store leftovers in the refrigerator for up to 3 days.
