- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 1/4 cup green onions, sliced
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion until translucent.
- Add the diced potatoes and chicken broth.
- Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Blend the mixture until smooth.
- Stir in the heavy cream and cheese until melted.
- Season with salt and pepper.
- Serve hot, topped with bacon and green onions.

- Adjust the thickness by adding more or less broth.
