Ingredients

  • 2 cups lobster meat, cooked and chopped
  • 4 strips bacon, diced
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 3 cups potatoes, diced
  • 4 cups seafood stock
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a large pot, cook the bacon until crispy. Remove and set aside.
  2. In the same pot, add butter and sauté onions, carrots, and celery until soft.
  3. Add potatoes and seafood stock. Bring to a boil, then simmer until potatoes are tender.
  4. Stir in the lobster meat and heavy cream. Heat through.
  5. Season with salt and pepper.
  6. Serve hot, garnished with bacon and parsley.
