- 300 grams (10.5 oz) spaghetti
- 4 cloves garlic, minced
- 250 grams (9 oz) cherry tomatoes, halved
- 60 ml (1/4 cup) olive oil
- 120 ml (1/2 cup) white wine
- 1/4 cup fresh parsley, chopped
- 1/2 teaspoon red pepper flakes (adjust to taste)
- Zest of 1 lemon
- Salt and pepper to taste
Instructions
- Prepare the lobsters by boiling them in salted water for 8-10 minutes until bright red, then extract the meat.
- Cook the spaghetti in the same pot of boiling salted water according to package instructions, reserving 1 cup of pasta water before draining.
- In a large skillet, heat olive oil and sauté minced garlic until fragrant, then add halved cherry tomatoes and cook until softened.
- Deglaze the skillet with white wine, simmer for 2-3 minutes, then add cooked spaghetti and lobster meat, tossing gently.
- Season with red pepper flakes, lemon zest, and parsley, adding reserved pasta water as needed for sauce consistency. Serve immediately.
