A delicious low carb bacon cheeseburger casserole that is easy to make and perfect for dinner.
Ingredients

- 1 lb ground beef
- 8 slices of bacon
- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese
- 4 large eggs
- 1/2 cup diced onion
- 1/4 cup diced pickles
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the bacon in a skillet until crispy. Remove and chop into pieces.
- In the same skillet, cook the ground beef and onion until the beef is browned.
- In a large bowl, mix the cream cheese and eggs until smooth.
- Add the cooked beef, bacon, cheese, pickles, garlic powder, salt, and pepper to the bowl.
- Pour the mixture into a greased baking dish.
- Bake for 25-30 minutes until set.
Notes
- Store leftovers in the refrigerator for up to 3 days.
- Top with additional cheese before baking for extra flavor.
- Feel free to add other low carb vegetables.
