- 2 ripe mangoes, peeled and sliced
- 1/2 cup (100g) unsalted butter, melted
- 1 cup (200g) brown sugar
- 1 1/2 cups (190g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1/2 cup (120ml) milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Prepare the baking pan: Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with butter or non-stick spray.
- Make the caramel: In a small saucepan over medium heat, combine the melted butter and brown sugar. Stir until the sugar is dissolved and bubbly. Pour this mixture into the bottom of the prepared cake pan.
- Arrange the mango slices: Place the sliced mangoes on top of the caramel in a decorative pattern.
- Prepare the cake batter: In a large mixing bowl, whisk together the granulated sugar, flour, baking powder, baking soda, and salt. In another bowl, combine the milk, eggs, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- Pour the batter: Carefully pour the cake batter over the mango slices in the pan, smoothing the top.
- Bake the cake: Place the cake in the preheated oven and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and invert: Once baked, let the cake cool in the pan for about 10 minutes. Run a knife around the edges to loosen it, then invert onto a serving plate.
- Serve: Allow the cake to cool slightly before slicing. Serve warm or at room temperature.
Notes
- For added flavor, sprinkle a little cinnamon into the batter.
- Serve with whipped cream or vanilla ice cream.
