- 2 large sweet potatoes, peeled and cubed
- 2 tablespoons olive oil
- 2 tablespoons maple syrup
- 1 tablespoon Dijon mustard
- Salt, to taste
- Pepper, to taste
- Fresh thyme, for garnish
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine olive oil, maple syrup, Dijon mustard, salt, and pepper.
- Add sweet potatoes to the bowl and toss to coat evenly.
- Spread the sweet potatoes on a baking sheet in a single layer.
- Roast in the oven for 25-30 minutes, until tender and caramelized.
- Garnish with fresh thyme before serving.
Notes
- Adjust the sweetness by adding more or less maple syrup.
- You can use other herbs for garnish if desired.
- Ensure even cooking by spreading sweet potatoes out on the baking sheet.
