Delicious and soft Maple Glazed Pumpkin Cookies that capture the essence of fall with a sweet maple glaze.

- 1 cup pumpkin puree
- 2 ½ cups all-purpose flour
- 1 cup brown sugar, packed
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- 1 teaspoon vanilla extract
- ½ cup unsalted butter, softened
- ½ cup maple syrup
- ½ teaspoon salt
For the Maple Glaze:
- 1 cup powdered sugar
- 2 tablespoons maple syrup
- 1–2 tablespoons milk
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the dry ingredients: flour, baking soda, cinnamon, nutmeg, and salt.
- In a large mixing bowl, cream the softened butter and brown sugar until light and fluffy. Add pumpkin puree and vanilla extract, blending until smooth.
- Gradually add the dry mixture to the wet mixture, stirring gently until just combined.
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes until the edges are lightly golden. The centers may look slightly underbaked.
- While the cookies bake, prepare the maple glaze by whisking together powdered sugar and maple syrup, adding milk until smooth.
- Once cookies are cooled, drizzle the maple glaze over the tops and allow to set.
Notes
- Store cookies in an airtight container at room temperature for up to a week.
- For longer storage, freeze cookies in a single layer and transfer to a freezer-safe bag after an hour.
- Consider adding nuts or chocolate chips for extra flavor and texture.
