Ingredients

  • 100 grams unsalted butter, melted (about 1/2 cup)
  • 50 grams granulated sugar (about 1/4 cup)
  • 450 grams cream cheese, softened (about 16 oz)
  • 150 grams maple syrup (about 1/2 cup)
  • 100 grams granulated sugar (about 1/2 cup)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 100 grams crushed pecans (about 1 cup)
  • Additional pecans for topping (optional)

Instructions

  1. Preheat your oven to 175°C (350°F).
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and 50 grams of granulated sugar. Mix until well-coated.
  3. Press the crumb mixture into the bottom of a greased 9×9-inch baking pan and bake for about 10 minutes.
  4. In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add 100 grams of granulated sugar and mix until well combined.
  5. Add maple syrup, eggs, and vanilla extract to the cream cheese mixture and mix until smooth.
  6. Gently fold in the crushed pecans into the mixture.
  7. Pour the cheesecake filling over the pre-baked crust and spread evenly.
  8. Bake for 25-30 minutes until the edges are set and the center is slightly jiggly.
  9. Let the bars cool at room temperature for about 30 minutes, then refrigerate for at least 4 hours or overnight.
  10. Cut into squares and serve with a drizzle of maple syrup and whole pecans on top.
