A delicious vegan marbled banana bread with a rich chocolate swirl.
Ingredients

- 3 ripe bananas
- 1/3 cup melted coconut oil
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup sugar
- 1 1/2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1/2 cup non-dairy milk
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mash the bananas until smooth.
- Add melted coconut oil and vanilla extract, and mix well.
- Stir in baking soda and salt.
- Add sugar and flour, mixing until just combined.
- Divide the batter in half; mix cocoa powder into one half.
- In a greased loaf pan, alternate layers of banana and chocolate batter.
- Use a knife to swirl the batters together slightly.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Let cool before slicing.
Notes
- Use very ripe bananas for best flavor.
- Store leftovers in an airtight container.
- This bread freezes well.
