- 4 medium sweet potatoes
- 1/2 cup brown sugar
- 1/4 cup butter
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 2 cups mini marshmallows
Instructions
- Preheat your oven to 350°F (175°C).
- Peel and chop the sweet potatoes into cubes.
- Boil the sweet potatoes until tender, about 15 minutes.
- Drain and mash the sweet potatoes in a bowl.
- Add brown sugar, butter, milk, and vanilla extract to the mashed sweet potatoes.
- Mix until smooth and creamy.
- Transfer the mixture to a baking dish.
- Top with mini marshmallows evenly.
- Bake for 20-25 minutes, until the marshmallows are golden brown.
Notes
- You can adjust the amount of brown sugar to your taste.
- For a crunchy topping, broil the dish for a few minutes after baking.
- This dish can be prepared a day in advance and baked before serving.
