A fun twist on traditional meatloaf, these meatloaf cupcakes are topped with creamy potato frosting.
Ingredients

- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup ketchup
- 1/4 cup onion, finely chopped
- 1 egg
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 cups mashed potatoes
- 1/4 cup milk
- 2 tablespoons butter
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix ground beef, breadcrumbs, ketchup, onion, egg, salt, and pepper.
- Scoop mixture into a cupcake pan.
- Bake for 25-30 minutes.
- While baking, prepare mashed potatoes with milk and butter.
- Once meatloaf cupcakes are done, let them cool slightly.
- Pipe mashed potatoes on top of each cupcake.
- Serve warm.
