Ingredients

  • 1/2 tsp black pepper
  • 1/4 cup fresh parsley, chopped
  • 1 cup orzo pasta

Instructions

  1. In a large pot, sauté onion, carrots, and celery until softened.
  2. Add the diced chicken and cook until browned.
  3. Pour in chicken broth and water, and bring to a boil.
  4. Stir in lemon juice, zest, oregano, salt, and pepper.
  5. Add orzo pasta and cook until tender, about 10 minutes.
  6. Remove from heat and stir in fresh parsley before serving.
