Ingredients

  • 1 cup feta cheese, crumbled
  • 1 cup spinach, chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup olives, sliced
  • 1/4 cup olive oil
  • 1 teaspoon oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Thaw the phyllo dough according to package instructions.
  3. Brush a muffin tin with olive oil.
  4. Layer 3 sheets of phyllo dough, brushing each layer with olive oil.
  5. Cut the layered phyllo into squares and place them in the muffin tin.
  6. In a bowl, mix feta, spinach, sun-dried tomatoes, olives, oregano, salt, and pepper.
  7. Fill each phyllo cup with the mixture.
  8. Bake for 15-20 minutes until golden brown.
  9. Let cool slightly before serving.
