Ingredients

- 1 cup brown rice
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 teaspoon olive oil
- 2 cups vegetable broth
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- Salt and pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and bell pepper, sauté until softened.
- Stir in garlic, oregano, and cumin, cook for 1 minute.
- Add rice, beans, and vegetable broth.
- Bring to a boil, then reduce heat, cover, and simmer for 40 minutes.
- Fluff with a fork and season with salt and pepper.
Notes
- Feel free to add other vegetables.
- This dish can be served warm or cold.
- Store leftovers in the refrigerator for up to 3 days.
