Ingredients

- 1 lb flank steak
- 2 cups cooked quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Cook quinoa according to package instructions.
- Season flank steak with salt, pepper, and oregano.
- Grill or pan-sear the steak for 6-8 minutes on each side.
- Allow the steak to rest for 5 minutes, then slice thinly.
- In a bowl, combine quinoa, tomatoes, cucumber, red onion, and feta cheese.
- Drizzle with olive oil and lemon juice, then toss to combine.
- Top the quinoa mix with sliced steak.
- Serve immediately.
