A refreshing Mexican salad made with cucumbers and lime.


Ingredients

  • 1/2 red onion, finely chopped
  • 1/2 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and diced
  • Juice of 2 limes
  • Salt to taste

Instructions

  1. Prepare cucumbers by dicing them into small pieces.
  2. Chop the red onion and cilantro.
  3. Seed and dice the jalapeño.
  4. In a large bowl, combine cucumbers, onion, cilantro, and jalapeño.
  5. Squeeze lime juice over the mixture.
  6. Add salt to taste and mix well.
  7. Chill in the refrigerator for 30 minutes before serving.

Notes

  • Adjust the heat by adding more or less jalapeño.
  • Serve with tortilla chips for a crunchy side.
