Description
A refreshing Mexican salad made with cucumbers and lime.
Ingredients

- 2 large cucumbers, diced
- 1/2 red onion, finely chopped
- 1/2 cup fresh cilantro, chopped
- 1 jalapeño, seeded and diced
- Juice of 2 limes
- Salt to taste
Instructions
- Prepare cucumbers by dicing them into small pieces.
- Chop the red onion and cilantro.
- Seed and dice the jalapeño.
- In a large bowl, combine cucumbers, onion, cilantro, and jalapeño.
- Squeeze lime juice over the mixture.
- Add salt to taste and mix well.
- Chill in the refrigerator for 30 minutes before serving.
Notes
- Adjust the heat by adding more or less jalapeño.
- Serve with tortilla chips for a crunchy side.
