Ingredients

- 4 cups corn kernels
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt to taste
- 2 tablespoons lime juice
- Fresh cilantro, chopped
- Feta cheese, crumbled
Instructions
- In a large pot, sauté onion and garlic until soft.
- Add corn, broth, chili powder, and cumin. Simmer for 20 minutes.
- Puree the mixture until smooth.
- Stir in cream, lime juice, and salt. Heat through.
- Serve topped with cilantro and feta.
Notes
- Adjust spice level by adding more chili powder.
- Use fresh or frozen corn for best results.
- Can be made ahead and stored in the fridge.
