Description

Mexican stuffed shells are pasta shells filled with a spicy mixture of ground meat, cheese, and salsa, topped with more cheese and baked until bubbly.


Ingredients

  • 12 jumbo pasta shells
  • 1 lb ground beef
  • 1 cup salsa
  • 1 cup shredded cheddar cheese
  • 1 cup black beans, drained and rinsed
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook the jumbo pasta shells according to package instructions; drain and set aside.
  3. In a skillet, brown the ground beef over medium heat.
  4. Add salsa, black beans, chili powder, cumin, and salt to the beef; mix well and cook for 5 minutes.
  5. Stuff each pasta shell with the beef mixture.
  6. Place stuffed shells in a baking dish and top with shredded cheddar cheese.
  7. Bake for 20 minutes until cheese is melted and bubbly.
  8. Garnish with fresh cilantro before serving.

Notes
