Ingredients

  • 16 ounces brick-style cream cheese, softened
  • 1/3 cup sour cream, room temperature
  • 1/2 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 2 large eggs, room temperature

Instructions

  1. Preheat your oven to 325°F (163°C) and line a 12-count muffin pan with cupcake liners.
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture into muffin cups and bake for 5 minutes, then set aside.
  3. In a separate bowl, beat softened cream cheese until smooth, add sour cream, sugar, and vanilla extract, and mix until combined.
  4. Add eggs one at a time, mixing on low speed until combined. Pour mixture into prepared crusts, filling each cup almost to the top.
  5. Tap the pan gently on the counter to remove air bubbles. Bake at 325°F for 17-20 minutes, until the tops are set with a slight jiggle in the center.
  6. Cool in the pan for 1 hour, then transfer to a cooling rack and refrigerate for 3-4 hours or overnight.
