Ingredients
- 120g (1 cup) all-purpose flour
- 100g (1/2 cup) granulated sugar
- 56g (1/4 cup) unsalted butter, softened
- 120g (2 large) eggs
- 2g (1/2 tsp) vanilla extract
- 120ml (1/2 cup) milk
- 6g (1 1/2 tsp) baking powder
- 1g (1/4 tsp) salt
For the Buttercream Frosting:
- 226g (1 cup) unsalted butter, softened
- 360g (3 cups) powdered sugar
- 30ml (2 tbsp) heavy cream
- 5g (1 tsp) vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Line a mini muffin tin with cupcake liners.
- In a large mixing bowl, cream together butter and sugar until light and fluffy.
- Beat in the eggs one at a time, followed by the vanilla extract.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, until combined.
- Spoon the batter into the mini muffin tin, filling each liner about 2/3 full.
- Bake for 10-12 minutes, or until a toothpick inserted comes out clean.
- Remove from the oven and allow the mini cupcakes to cool completely on a wire rack.
- For the frosting: In a bowl, beat together the softened butter and powdered sugar until smooth. Add heavy cream and vanilla extract, and continue beating until fluffy.
- Frost the cooled mini cupcakes with the buttercream frosting. You can use a piping bag for a decorative look, or spread the frosting with a spatula.
- Optionally, add food coloring to the frosting for a vibrant touch and decorate as desired.
Notes
- If you’re short on time, you can use store-bought frosting, though homemade frosting makes these mini cupcakes extra special.
- For a fun twist, try adding chocolate chips to the cupcake batter for added texture and flavor.
- To make the frosting extra smooth, ensure the butter is softened before mixing with the powdered sugar. This helps avoid lumps in your frosting.
- Mini cupcakes are perfect for serving at a party, as they’re easy to eat and don’t require utensils
