Description
A delicious recipe for mini fruit tarts filled with creamy pastry cream.
Ingredients

- 1 package of pre-made tart shells
- 1 cup of milk
- 1/2 cup of sugar
- 3 egg yolks
- 1/4 cup of cornstarch
- 1 teaspoon of vanilla extract
- 1/2 cup of heavy cream
- Assorted fresh fruits (strawberries, blueberries, kiwi)
Instructions
- In a saucepan, heat the milk and sugar over medium heat until warm.
- In a bowl, whisk together egg yolks and cornstarch until smooth.
- Gradually add the warm milk to the egg mixture, whisking constantly.
- Return the mixture to the saucepan and cook over medium heat until thickened.
- Remove from heat and stir in vanilla extract.
- Let the pastry cream cool to room temperature.
- In a separate bowl, whip the heavy cream until soft peaks form.
- Gently fold the whipped cream into the cooled pastry cream.
- Fill each tart shell with the pastry cream.
- Top with assorted fresh fruits.
- Chill the tarts for at least 1 hour before serving.
Notes
- You can use any combination of fruits you like.
- Make sure the tart shells are fully cooled before filling.
- This recipe can be doubled for a larger crowd.
