Ingredients

- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced

- 1/4 cup Kalamata olives, pitted and sliced
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste

Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine cherry tomatoes, cucumber, red onion, feta cheese, and olives.
- In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
- Pour the dressing over the salad mixture and toss to coat.
- Place mini phyllo cups on a baking sheet.
- Fill each cup with the salad mixture.
- Bake for 5-7 minutes until the cups are crispy.
- Serve warm or at room temperature.
