Instructions
- Preheat the oven to 350°F (177°C). Line a 12-count muffin pan with cupcake liners.
- In a large mixing bowl, beat softened cream cheese on low speed until smooth. Add sugar, sour cream, and vanilla extract and mix well.
- Add eggs one at a time, mixing just until combined. Gently fold in the crushed Oreo cookies.
- Place a whole Oreo cookie at the bottom of each cupcake liner. Fill each well with the cheesecake filling, leaving a little space at the top. Bake for 14-16 minutes, until the edges are set and the center slightly jiggles. Let cool for 1 hour, then refrigerate for 6 hours or overnight.
- For the topping, mix sour cream, sugar, and vanilla extract. Top each mini cheesecake with this mixture and a sprinkle of crushed Oreos.
