These mini strawberry crunch cheesecake bites are a delightful dessert with a creamy filling and a crunchy topping.

- 8 oz cream cheese, softened
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1 cup whipped cream
- 1 cup strawberries, chopped
- 1 cup graham cracker crumbs
- 1/2 cup butter, melted
- 1/4 cup powdered sugar
Instructions
- Preheat the oven to 350°F (175°C).
- Mix graham cracker crumbs and melted butter in a bowl.
- Press the mixture into the bottom of mini muffin tins.
- Bake for 5 minutes, then let cool.
- In a bowl, beat cream cheese, sugar, and vanilla until smooth.
- Fold in whipped cream and chopped strawberries.
- Fill each cooled crust with the cheesecake mixture.
- Chill in the refrigerator for at least 2 hours before serving.
