Mini Turkey Meatloaf Muffins are a healthy and tasty twist on traditional meatloaf. Perfect for meal prep or a quick family dinner.

- 1 lb ground turkey
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/2 cup finely chopped onion
- 1/2 cup finely chopped bell pepper
- 2 cloves garlic, minced
- 1 egg
- 2 tbsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup ketchup
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine ground turkey, breadcrumbs, Parmesan cheese, onion, bell pepper, garlic, egg, Worcestershire sauce, salt, and pepper.
- Mix until well combined.
- Grease a muffin tin and fill each cup with the turkey mixture.
- Spoon ketchup on top of each muffin.
- Bake for 25-30 minutes or until cooked through.
- Let cool for a few minutes before serving.

- These muffins freeze well.
- Adjust seasoning to your taste.
