Description
Mississippi Mud Cake is a rich chocolate cake topped with gooey marshmallows and a chocolate frosting.
Ingredients

- 1 cup unsalted butter
- 2 cups granulated sugar
- 1 cup unsweetened cocoa powder
- 4 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon vanilla extract
- 2 cups mini marshmallows
- 1 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9×13 inch baking pan.
- In a saucepan, melt butter over medium heat.
- Stir in sugar and cocoa until well combined.
- Remove from heat and let cool slightly.
- Add eggs one at a time, mixing well after each addition.
- Stir in flour, baking powder, salt, and vanilla until just combined.
- Pour batter into prepared pan and bake for 30-35 minutes.
- Remove from oven and sprinkle marshmallows and chocolate chips on top.
- Return to oven for an additional 5-10 minutes until marshmallows are puffy.
Notes
- Let the cake cool before slicing.
- Store leftovers in an airtight container.
- Serve with whipped cream if desired.
