A delicious mixed berry buckle dessert that combines tart berries with a crumbly topping.

- 2 cups mixed berries (blueberries, raspberries, strawberries)
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 1/2 cup milk
- 1 egg
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp vanilla extract
- 1/4 cup brown sugar for topping
- 1/4 cup oats for topping
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together the butter and granulated sugar.
- Add the egg and vanilla extract, mixing well.
- In another bowl, combine flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with milk.
- Fold in the mixed berries gently.
- Pour the batter into a greased baking dish.
- In a separate bowl, mix brown sugar and oats for the topping.
- Sprinkle the topping over the batter.
- Bake for 30-35 minutes or until golden brown.
Notes
- Serve warm with ice cream or whipped cream.
- Store leftovers in the refrigerator for up to 3 days.
- You can use frozen berries if fresh ones are not available.
