Description

A delightful recipe for mixed berry muffins that are easy to make and bursting with flavor, perfect for any occasion.

Ingredients

  • All-purpose flour: 2 cups (240 grams)
  • Granulated sugar: 3/4 cup (150 grams)
  • Baking powder: 2 teaspoons
  • Salt: 1/2 teaspoon
  • Eggs: 2 large
  • Milk: 1 cup (240 milliliters)
  • Unsalted butter: 1/2 cup (115 grams), melted
  • Vanilla extract: 1 teaspoon
  • Fresh blueberries: 1/2 cup (75 grams)
  • Fresh raspberries: 1/2 cup (75 grams)
  • Fresh strawberries: 1/2 cup (75 grams), hulled and chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the muffin tin by lining it with paper liners or greasing it.
  3. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.
  4. In a separate bowl, beat the eggs and then add the milk, melted butter, and vanilla extract, whisking until smooth.
  5. Pour the wet mixture into the dry ingredients and gently fold them together, then fold in the blueberries, raspberries, and chopped strawberries.
  6. Scoop the batter into the muffin tin, filling each cup about two-thirds full.
  7. Bake for 18-22 minutes until golden brown and a toothpick comes out clean.
  8. Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Fresh berries are recommended for the best flavor, but frozen berries can be used if thawed and drained.
  • Store leftover muffins in an airtight container at room temperature for up to three days or freeze for up to three months.
  • For gluten-free muffins, substitute all-purpose flour with a gluten-free flour blend.
  • For vegan muffins, replace eggs with flaxseed meal or applesauce and use plant-based milk and butter.
