Ingredients

  • 1/2 cup applesauce
  • 1/4 cup honey
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix grated zucchini, applesauce, honey, vegetable oil, eggs, and vanilla.
  3. In another bowl, combine whole wheat flour, baking soda, baking powder, salt, and cinnamon.
  4. Gradually add the dry ingredients to the wet mixture.
  5. Fold in walnuts if using.
  6. Pour the batter into a greased loaf pan.
  7. Bake for 50-60 minutes or until a toothpick comes out clean.
  8. Let it cool before slicing.
