Description
A rich and moist cake made with molasses and chopped dates.

- 1 cup (240 ml) molasses
- 1/2 cup (115 g) unsalted butter, softened
- 1 cup (200 g) brown sugar, packed
- 2 large eggs
- 1 1/2 cups (190 g) all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1 cup (150 g) pitted dates, chopped
- 1 cup (240 ml) hot water
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch (23 cm) round cake pan or line it with parchment paper.
- In a bowl, combine the chopped dates with the hot water. Let them soak for about 10-15 minutes until they soften. Drain any excess water and set aside.
- In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
- Beat in the eggs one at a time, mixing well after each addition. Then, add the molasses and mix until fully incorporated.
- In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and ginger.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Gently fold the soaked and drained dates into the batter until evenly distributed.
- Pour the batter into the prepared cake pan, smoothing the top with a spatula.
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
- Slice the cake and serve it on a simple white plate. It can be enjoyed warm or at room temperature.
Notes
- Chop the dates into small pieces for even distribution.
- For a sweeter cake, increase the amount of brown sugar slightly.
- Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
