  • 1 cup boiling water
  • 1/2 cup fresh orange juice
  • 1/4 cup granulated sugar
  • Zest of 1 orange

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, ginger, and nutmeg. Set aside.
  3. In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy. Add the molasses, eggs, and vanilla extract, mixing until well combined.
  4. Gradually add the dry ingredients to the wet mixture, alternating with the boiling water. Start and end with the dry ingredients. Mix until just combined. Fold in the chopped dates.
  5. Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  6. While the cake is cooling, prepare the orange syrup. In a small saucepan, combine the fresh orange juice, granulated sugar, and orange zest. Bring to a simmer over medium heat, stirring until the sugar dissolves. Let it simmer for about 5 minutes until slightly thickened. Remove from heat and let it cool slightly.
  7. Once the cake is completely cool, drizzle the orange syrup over the top. Slice and serve with extra syrup on the side for drizzling.
