  • 1/2 cup unsalted butter, softened (113 g)
  • 1/2 cup brown sugar, packed (100 g)
  • 1/4 cup molasses (60 ml)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup pitted dates, chopped (about 150 g)
  • 1/2 cup mandarin orange segments, chopped (about 100 g)
  • 1/2 cup chopped walnuts or pecans (optional) (about 60 g)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch (23×13 cm) loaf pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, and nutmeg. Set aside.
  3. In a large mixing bowl, cream the softened butter and brown sugar together until light and fluffy, about 3-4 minutes.
  4. Beat in the molasses, eggs, and vanilla extract until well combined.
  5. Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined.
  6. Gently fold in the chopped dates, mandarin orange segments, and nuts (if using) until evenly distributed.
  7. Transfer the batter into the prepared loaf pan, smoothing the top with a spatula.
  8. Bake in the preheated oven for 50-60 minutes, or until a toothpick comes out clean.
  9. Once baked, let it cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  10. Slice and serve plain or with butter.
