Ingredients

- 2 cups cooked spaghetti
- 1 lb boneless chicken breasts
- 1 cup Monterey Jack cheese, shredded
- 1 cup salsa
- 1/2 cup bell pepper, chopped
- 1/2 cup onion, chopped
- 2 tbsp olive oil
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C).
- Cook spaghetti according to package instructions.
- In a skillet, heat olive oil over medium heat.
- Add chicken and cook until browned.
- Stir in bell pepper, onion, garlic powder, salt, and pepper.
- Mix in cooked spaghetti and salsa.
- Transfer to a baking dish and top with Monterey Jack cheese.
- Bake for 20 minutes or until cheese is melted.
Notes
- Serve with a side salad.
- Can substitute chicken with turkey or tofu for variations.
