Ingredients

- 1 can chickpeas, drained and rinsed
- 2 large carrots, grated
- 1/2 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice

Instructions
- In a large bowl, combine chickpeas, grated carrots, red onion, and parsley.
- In a separate bowl, whisk together olive oil, lemon juice, cumin, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
