  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 can (14 oz) diced tomatoes
  • 2 cups beef broth
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef and brown on all sides.
  3. Remove beef and set aside.
  4. Add onion and garlic to the pot, sauté until soft.
  5. Add carrots and potatoes, stir for a few minutes.
  6. Return beef to the pot.
  7. Add tomatoes, beef broth, and spices.
  8. Bring to a boil, then reduce heat to low.
  9. Cover and simmer for 1.5 to 2 hours until beef is tender.
  10. Season with salt and pepper.
  11. Garnish with fresh cilantro before serving.
