Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic; sauté until softened.
  3. Add carrots, zucchini, and bell pepper; cook for 5 minutes.
  4. Stir in chickpeas, diced tomatoes, and vegetable broth.
  5. Add cumin, coriander, paprika, cinnamon, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 30 minutes.
  7. Garnish with fresh cilantro before serving.
