Ingredients

  • Fresh pasta: 400 grams (about 14 oz)
  • Assorted mushrooms: 300 grams (about 10 oz)
  • Garlic: 4 cloves, minced
  • Shallots: 2 finely chopped
  • Olive oil: 2 tablespoons
  • Heavy cream: 200 ml (about ¾ cup)
  • Parmesan cheese: 100 grams (about 1 cup), grated
  • Fresh thyme: 2 tablespoons, chopped
  • Salt and black pepper: To taste

Instructions

  1. Prepare all ingredients by washing and slicing the mushrooms, mincing the garlic, and chopping the shallots.
  2. Cook the fresh pasta in salted boiling water according to package instructions, usually about 2-4 minutes, and reserve one cup of pasta water.
  3. In a large skillet, heat olive oil over medium heat, sauté shallots for 2 minutes, then add garlic and cook for another 30 seconds.
  4. Add sliced mushrooms to the skillet, season with salt and pepper, and sauté for 5-7 minutes until golden brown.
  5. Lower the heat, pour in the heavy cream, and stir to combine. Add reserved pasta water if the sauce is too thick.
  6. Toss the cooked pasta with the mushroom cream sauce, add Parmesan cheese and thyme, and mix well.
  7. Plate the dish, garnish with extra Parmesan and thyme, and serve immediately.
