Ingredients
- Fresh pasta: 400 grams (about 14 oz)
- Assorted mushrooms: 300 grams (about 10 oz)
- Garlic: 4 cloves, minced
- Shallots: 2 finely chopped
- Olive oil: 2 tablespoons
- Heavy cream: 200 ml (about ¾ cup)
- Parmesan cheese: 100 grams (about 1 cup), grated
- Fresh thyme: 2 tablespoons, chopped
- Salt and black pepper: To taste
Instructions
- Prepare all ingredients by washing and slicing the mushrooms, mincing the garlic, and chopping the shallots.
- Cook the fresh pasta in salted boiling water according to package instructions, usually about 2-4 minutes, and reserve one cup of pasta water.
- In a large skillet, heat olive oil over medium heat, sauté shallots for 2 minutes, then add garlic and cook for another 30 seconds.
- Add sliced mushrooms to the skillet, season with salt and pepper, and sauté for 5-7 minutes until golden brown.
- Lower the heat, pour in the heavy cream, and stir to combine. Add reserved pasta water if the sauce is too thick.
- Toss the cooked pasta with the mushroom cream sauce, add Parmesan cheese and thyme, and mix well.
- Plate the dish, garnish with extra Parmesan and thyme, and serve immediately.
