Description

A delicious vegetarian lasagna made with layers of mushrooms, spinach, and cheese.


Ingredients

  • 9 lasagna noodles
  • 2 cups mushrooms, sliced
  • 2 cups fresh spinach
  • 1 cup ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup parmesan cheese, grated
  • 2 cups marinara sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions.
  3. In a skillet, heat olive oil over medium heat. Add garlic and mushrooms, cooking until mushrooms are soft.
  4. Add spinach, salt, and pepper to the skillet. Cook until spinach wilts.
  5. In a baking dish, spread a layer of marinara sauce.
  6. Layer 3 lasagna noodles on top of the sauce.
  7. Add half of the ricotta cheese, half of the mushroom-spinach mixture, and a third of the mozzarella cheese.
  8. Repeat the layers, finishing with noodles and the remaining marinara sauce.
  9. Top with remaining mozzarella and parmesan cheese.
  10. Bake for 30-35 minutes until golden and bubbly.
  11. Let cool for 10 minutes before slicing and serving.

  • Use fresh herbs for added flavor.
