Description
A delicious vegetarian lasagna made with layers of mushrooms, spinach, and cheese.
Ingredients

- 9 lasagna noodles
- 2 cups mushrooms, sliced
- 2 cups fresh spinach
- 1 cup ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1 cup parmesan cheese, grated
- 2 cups marinara sauce
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions.
- In a skillet, heat olive oil over medium heat. Add garlic and mushrooms, cooking until mushrooms are soft.
- Add spinach, salt, and pepper to the skillet. Cook until spinach wilts.
- In a baking dish, spread a layer of marinara sauce.
- Layer 3 lasagna noodles on top of the sauce.
- Add half of the ricotta cheese, half of the mushroom-spinach mixture, and a third of the mozzarella cheese.
- Repeat the layers, finishing with noodles and the remaining marinara sauce.
- Top with remaining mozzarella and parmesan cheese.
- Bake for 30-35 minutes until golden and bubbly.
- Let cool for 10 minutes before slicing and serving.
Notes
- Use fresh herbs for added flavor.
- Substitute any cheese if desired.
- Let leftovers cool before storing in the fridge.
