These no bake cookie dough bars are vegan and gluten free. They are easy to make and perfect for a quick snack.
Ingredients

- 1 cup almond flour
- 1/2 cup peanut butter
- 1/3 cup maple syrup
- 1/4 cup coconut oil, melted
- 1/2 cup chocolate chips
- 1 tsp vanilla extract
Instructions
- In a bowl, mix almond flour and peanut butter.
- Add maple syrup and melted coconut oil. Stir until combined.
- Mix in chocolate chips and vanilla extract.
- Press the mixture into a lined baking dish.
- Refrigerate for at least 30 minutes.
- Cut into bars and serve.
