A simple and delicious no-bake pumpkin bars recipe that is vegan and healthy.
Ingredients

- 1 cup of rolled oats
- 1 cup of almond flour
- 1 cup of canned pumpkin puree
- 1/2 cup of maple syrup
- 1/4 cup of coconut oil, melted
- 1 teaspoon of vanilla extract
- 1 teaspoon of pumpkin spice
- 1/2 teaspoon of salt
Instructions
- In a bowl, mix the rolled oats and almond flour.
- Add the pumpkin puree, maple syrup, melted coconut oil, vanilla extract, pumpkin spice, and salt.
- Stir until well combined.
- Press the mixture into a lined baking dish.
- Refrigerate for at least 2 hours to set.
- Cut into bars and serve.

- Store leftovers in the refrigerator.
- Can be topped with vegan chocolate or nuts if desired.
