Ingredients
- 1 cup (120g) whole wheat flour (or all-purpose flour for a lighter version)
- 1/2 cup (100g) coconut sugar (or any sweetener of choice)
- 1/4 cup (60ml) vegetable oil (or melted coconut oil)
- 1/4 cup (60g) unsweetened applesauce
- 1 tsp (5ml) vanilla extract
- 1/2 tsp (2g) baking soda
- 1/4 tsp (1g) salt
- Optional: 1/4 cup (45g) dark chocolate chips or chopped nuts
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, combine the flour, coconut sugar, baking soda, and salt.
- Add the vegetable oil, applesauce, and vanilla extract to the dry ingredients. Stir until the dough is well combined. You should have a thick, non-sticky dough.
- If you want to add some extra texture, fold in the dark chocolate chips or chopped nuts at this stage.
- Using a spoon or cookie scoop, form dough balls about 1 inch in diameter and place them on the prepared baking sheet. Flatten each cookie slightly with the back of a spoon.
- Bake for 8-10 minutes, or until the edges of the cookies are lightly golden. Keep an eye on them, as these cookies bake quickly!
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Enjoy your no butter cookies with a warm drink or on their own!
Notes
- Substitution for sugar: If you prefer a lower glycemic index sweetener, you can replace the coconut sugar with stevia or monk fruit sweetener.
- Adding flavor: If you’re in the mood for a twist, try adding some cinnamon or nutmeg to the dough for a warm, spiced flavor.
- For a vegan version, ensure you’re using dairy-free chocolate chips or skip the chocolate altogether for a plain but delightful cookie.
