Healthy oat breakfast bars that are vegan and gluten free.
Ingredients

- 2 cups rolled oats
- 1 cup almond butter
- 1/2 cup maple syrup
- 1/2 cup chia seeds
- 1/2 cup dried fruit (raisins or cranberries)
- 1/2 cup nuts (walnuts or almonds)
- 1 tsp vanilla extract
- 1/2 tsp salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix oats, chia seeds, salt, and nuts.
- In another bowl, combine almond butter, maple syrup, and vanilla extract.
- Pour the wet mixture into the dry mixture. Stir until fully combined.
- Add dried fruit and mix well.
- Spread the mixture evenly in a greased baking dish.
- Bake for 25-30 minutes until golden.
- Let cool before cutting into bars.
Notes
- Store in an airtight container.
- These bars can be frozen for longer storage.
