A delicious blend of cheesecake and oatmeal cream pie flavors.
Ingredients

- 1 cup graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- 16 oz cream cheese, softened
- 1 cup sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1 cup rolled oats
- 1/2 cup brown sugar
- 1/2 tsp cinnamon
- 1 cup mini marshmallows
- 1/2 cup whipped cream
Instructions
- Preheat the oven to 350°F (175°C).
- Mix graham cracker crumbs, sugar, and melted butter together.
- Press the mixture into the bottom of a springform pan.
- In a bowl, beat cream cheese and sugar until smooth.
- Add vanilla extract and eggs, one at a time, mixing well.
- Blend in sour cream, oats, brown sugar, and cinnamon.
- Pour the cheesecake mixture over the crust.
- Bake for 50-60 minutes until set.
- Allow to cool and refrigerate for at least 4 hours.
- Top with mini marshmallows and whipped cream before serving.
Notes
- Can be made a day in advance.
- Store leftovers in the refrigerator.
- For a richer flavor, use full-fat cream cheese.
