Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 tsp cinnamon
  • 1 cup mini marshmallows
  • 1/2 cup whipped cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix graham cracker crumbs, sugar, and melted butter together.
  3. Press the mixture into the bottom of a springform pan.
  4. In a bowl, beat cream cheese and sugar until smooth.
  5. Add vanilla extract and eggs, one at a time, mixing well.
  6. Blend in sour cream, oats, brown sugar, and cinnamon.
  7. Pour the cheesecake mixture over the crust.
  8. Bake for 50-60 minutes until set.
  9. Allow to cool and refrigerate for at least 4 hours.
  10. Top with mini marshmallows and whipped cream before serving.

Notes

  • Can be made a day in advance.
  • Store leftovers in the refrigerator.
  • For a richer flavor, use full-fat cream cheese.
