- 1 cup rolled oats
- 1 cup milk
- 1/2 cup honey
- 1/4 cup vegetable oil
- 2 eggs
- 1 cup whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 cup raisins or nuts (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix rolled oats and milk. Let it sit for 10 minutes.
- Add honey, vegetable oil, and eggs to the oat mixture. Stir well.
- In another bowl, combine whole wheat flour, baking powder, baking soda, salt, and cinnamon.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Fold in raisins or nuts if using.
- Fill muffin tins with the batter.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Cool on a wire rack before serving.
Notes
- Store leftover muffins in an airtight container.
- You can substitute honey with maple syrup.
- For a sweeter muffin, add more honey or a banana.
