Ingredients

  • 2 eggs

  • 2 cups all-purpose flour
  • 1 tablespoon ground ginger
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine chopped dates and boiling water. Let it sit for 10 minutes.
  3. In a large bowl, cream together butter and brown sugar.
  4. Add eggs and molasses to the butter mixture. Mix well.
  5. In another bowl, whisk together flour, ginger, baking soda, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture. Stir until combined.
  7. Fold in the date mixture.
  8. Pour the batter into a greased cake pan.
  9. Bake for 45-50 minutes or until a toothpick comes out clean.
  10. Allow to cool before serving.
