  • 1 teaspoon baking soda
  • 1/2 cup (115g) unsalted butter, softened
  • 1 cup (200g) brown sugar, packed
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (120ml) milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch (23cm) round cake pan or line it with parchment paper.
  2. In a medium bowl, combine chopped dates and boiling water. Stir in baking soda and let sit for 10-15 minutes.
  3. Cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in eggs one at a time, mixing well after each addition. Add vanilla extract and mix until combined.
  5. In a separate bowl, whisk together flour, baking powder, and salt.
  6. Gradually add dry ingredients to butter mixture, alternating with milk. Start and end with flour mixture, mixing just until combined.
  7. Gently fold date mixture into the batter.
  8. Pour batter into the prepared cake pan and smooth the top. Bake for 30-35 minutes or until a toothpick comes out clean.
  9. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. Slice the cake and serve plain or with whipped cream.
