- 4 chicken thighs
- 2 cups broccoli florets
- 1 cup sliced carrots
- 1 red bell pepper, chopped
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, mix olive oil, garlic powder, paprika, salt, and pepper.
- Add chicken thighs to the bowl and coat them evenly with the mixture.
- Place the chicken in a baking dish.
- Add broccoli, carrots, and bell pepper around the chicken.
- Drizzle any remaining oil mixture over the vegetables.
- Bake for 30-35 minutes or until the chicken is cooked through.
- Let it rest for 5 minutes before serving.
